Description: Yo-Scoop is a convenient, cost effective all-in-one yoghurt gelato base in powder form used for making a range of fruity flavoured yoghurt gelatos in batch freezers.
The base is made from quality natural instantised ingredients and by using it you get the same results as using milk, sugar, yoghurt, eggs, etc. It is just a lot easier and faster, because you just add water and flavouring or pureed fruit and you´re done!
Yoghurt can of course only be made using the ´cold processing´ method using your batch freezer for two reasons:
- You will retain the beneficial bacteria in Yo-Scoop with a hot process. (Lactobacillus bulgaricus and Streptococcus thermophylus)
- If you put food acid, milk protein and water together and you add heat to it - you get a lot of curdling. With cold processing this is minimal.
The advantages in using Yo-Scoop are obvious: being and all-in-one mix, it is saving time. You have consistency batch after batch. It is cost effective.
So how do you use it: simply mix with water, stand for 10 minutes to rehydrate ingredients, add fruit purees or flavourings specially designed for gelato, mix and freeze down. For a higher fat, creamier product, you can use milk instead of water for mixing.
You can also use Frosty Boy Fruit Syrups or Flavacols for flavouring your Yo-Scoop which is normally used in soft serve.

Packaging: 10.75kg Net (5 x 2.15kg sachets)
Sachets: airtight, lightproof, CO2 flushed food-grade, foil-laminate bags bearing the following information in English: Product Name, Product Code, Net Weight, Mixing Instructions, Ingredients, Manufacturing Date, Best Before Date, Batch Code, Time Manufactured.
Cartons: Custom-printed, export-grade single corrugated ´1C´ super-flute cardboard box, with a label bearing the following information: Product Name, Product Code, Net Weight, Ingredients, Packaging Date, Best-before Date, Storage Instructions & Supplier Details. Then in jet-print, the Pallet Code and Time of Packaging is printed on the reverse side of the carton.

Storage Instructions: Cartons of powder base must be stored below 25ºC (77ºF) away from direct light.
Shelf Life: 12 months from date of manufacture.
After mixing, it is must be stored below 4ºC (39ºF) and used within 3 days.

Mixing & Yield: Each bag (2 kg) is mixed 3.5 litres of water (so yield per bag is 5.5 kg or ~5 litres).
Each carton therefore yields 27.5 kg BEFORE fruit flavourings are added (250 x 110g scoops).
Cost Indication: ~AU$0.40 per 110g serve when reconstituted with water and excluding flavouring.
