How do you choose a Granita (Slush) Machine ?

• Fisrt, determine what your needs are. Do you need a single bowl, double bowl, triple bowl or even 2 x twin-bowl machines? Each new bowl means you can do another exciting flavour / colour slush. Are you going to sell only slush/granita or will a second or third bowl be used for a refrigerated beverage? Because slush machines have both refrigeration and freezing modes, you may decide to serve a dairy-based iced coffee or perhaps a fresh fruit juice that may be used for making smoothies from a second or third bowl. 
• Determine likely sales volume and demand from each bowl and choose a bowl size:
  • Some machines have 5-litre bowls, some 10-litre bowls, and others 12-litre bowls. Coffee shops may want to sell a high quality iced coffee (high margins, low volumes) and a 5-litre bowl would be sufficient. This would also be the case for a bar using a natural fruit-based slush as a base for making daiquiris or mock tails - rather buy 2 x 5-litre bowls.

                                                             

• Do you get consistent traffic, or large crowds coming in all at the same time. For large crowds, you will need the biggest bowl possible. From a 12-litre bowl, you will be able to sell 36 x 330ml (11 ounce) cups before it is empty if you serve them all at the same time with no time for re-freezing fresh mix. It will then take up to 30 minutes minimum to re-freeze slush which is at 4 degrees Celsius which was kept in a fridge. Slush at room temperature (16 - 20 degrees C.) can take up to an hour to freeze completely.
• Slush machines can last many, many years - if you buy quality Italian machines (the Italians are world leaders in slush machines) from reputable companies that also give back-up service and keep spare parts. The simple principle "You pay for what you get" applies once again with slush machines. WE carry two quality brands of Italian machines with service backup: Elmeco and GBG.
