Description: We are proud to announce the addition of cultured berryo frozen yogurt dessert (or soft serve) base. It compliments our fantastic range of soft serve and frozen yogurt bases. berryo has proved to become our Flagship Product in Frozen Yogurt Desserts. It has healthy attributes like ’No Fat’ and ‘packed with prebiotics and probiotic cultures’ and therefore a sought after product. From an operational and functional point of view - its ease of mixing, its consistency, its superb functionality in soft serve machines and its typical frozen yogurt texture - makes berryo unbeatable (no separation, good aeration and long meltdown time).

At the time of manufacture, berryo contains >1,000,000 probiotic bacteria per gram in the final frozen state. berryo also contains the prebiotic fibre Inulin, with reported health benefits. Easy to mix, conveniently packed, a long shelf life, delicious crisp tart flavor and a low cost per serve makes this a super profitable product.

Ingredients: Sugar, Maltodextrin, Milk Solids, Dietary Fibre (Inulin), Food Acids (330, 331), Flavour, Vegetable Gums (412, 405, 410, 407), Emulsifiers (471, 322 Soy), Live Yoghurt Cultures.

This product contains Dairy and Soy as indicated.

Packaging: berryo powder base is packed in airtight food-grade, foil-laminate bags - 7 x 1.74kg bags (or 12.18 kg) per carton.
Storage / Shelf Life: Storage is below 25ºC (77ºF) with a shelf life of 12 months. After mixing, it is stored below 5ºC (41ºF) and used within 3 days.
Yield: Each bag (1.74kg) is mixed into 4 litres of water (so yield per bag is 5.74kg). Each carton yields 40.2 kg (~36.5 liters) of liquid base ready for freezing down in a soft serve machine (excluding lemon juice or green tea powder). This is equivalent to 536 serves of 75g (2.6 ounce) per carton (which is ~110ml or 3.7 ounce using a pump machine @ 60% overrun)
Mixing For Traditional Yoghurt
  • Pour water into graded mixing container.
  • Open one bag and add to water while
    stirring with a wire whisk.
  • Stir until sugar is dissolved.
  • Cover and stand for 10 minutes allowing ingredients to fully re-hydrate.
  • Add 80 to 120 mL lemon juice (2.7 - 4.0 oz) and stir. (Addition rate depends on how tart you want the flavour.)
  • Pour into soft serve machine and freeze down and ENJOY!
Green Tea Yogurt
  • Pour water into graded mixing container.
  • Open one bag and add to water while
    whisking/whipping with a wire whisk.
  • Stir until sugar is dissolved.
  • Cover and stand for 10 minutes allowing
    ingredients to fully re-hydrate.
  • Add green tea powder to taste and stir. (Tip: when the taste seems strong enough in the liquid form, it should also be fine when frozen down).
  • Pour into soft serve machine and freeze down and ENJOY!

Applications :

  1. Sold plain in cups/bowls or on cones.
  2. Sold on Fresh fruit salad.
  3. Sold in paper/plastic cups with fresh fruit or berries around the side.
  4. Sold pre-flavoured in a range of fruity flavours in cups or on cones.
  5. Used as a base to make smoothies. Blend 2/3 with 1/3 milk and/or fruit juice and add ~10% fruit for a delicious yoghurt fruit smoothie packed with yoghurt cultures and goodness!
